I just made the nicest chicken soup. I don't think i will ever buy chicken soup again!

I must admit I have stopped trusting what is in them much
I don't like the idea of processed food. One day I will live on a little farm and keep chickens and never buy food again ;)

I need to start learning how to make soup. Gonna work out a few recipies online before Hemma gets here so I can make her soups :)

Soup is easy if you have a blender..

Chicken soup: Cook roast chicken. Eat all the good bits. Remove the skin. Put carcass in saucepan with some chunks of carrot and onion, salt and pepper. Cover with water. Bring to boil then turn the heat right down. Cover. Leave for a couple of hours. Take the carcass out. You're left with a clear (stock) soup like you get at Chinese restaurants (you can add sweetcorn and soy sauce). It should have little bits of chicken floating in it.

If you want a chicken soup like you get out of a tin then just bung the whole lot in a blender. You can stir some cream in afterwards if you're feeling posh.

Vegetable soup: Put vegetables in saucepan with water and salt/pepper. Bring to boil then turn the heat right down. Cover. Leave for an hour or so. Blend.

Thick soup - as above but put Okra in it (or potatoes if you don't have any okra)

I am sure there are more involved ways of doing it but the above works fine :)
